This recipe comes from my Step -Grandmother, who lived in Louisiana all her life. She was an amazing cook. Ingredients:
1 cup buttermilk |
1/4 teaspoon soda |
1 egg |
1/4 cup flour |
1 tablespoon sugar |
1/4 cup oil |
3/4 cup stone ground white corn meal (yellow cornmeal is fine) |
1 teaspoon salt |
4 tablespoons oil for skillet |
Directions:
1. Pre-heat oven 475 to 500 degrees. 2. In a medium bowl, mix all ingredients. Don't overmix. Should be slightly lumpy. 3. Meanwhile, pour 4 tablespoons of oil into a cast iron skillet. 4. Place cast iron skillet into pre-heated oven. 5. Once the skillet is hot, remove from oven and pour mixed ingredients into hot cast iron skillet. 6. Bake for 15 to 20 mns. |
