Adapted from Mexican Family Cooking. The soaking step is optional. Good with a simple lettuce salad. Cooking time is chilling time. Ingredients:
1 teaspoon rosemary |
hot water (optional) |
1 cup oil |
1/4 cup vinegar |
1 teaspoon salt (to taste) |
1/2 teaspoon paprika, mexican preferred |
1 garlic clove, bruised |
Directions:
1. Cover rosemary with hot water and soak about 3 minutes. Drain. This step is optional. 2. Place rosemary in a jar with a lid. 3. Add remaining ingredients. 4. Shake well. 5. Refrigerate for at least 1 hour. 6. Strain before using. |
