From Cooking Light. Ingredients:
vegetable cooking spray |
1 1/2 tsps all-purpose flour |
1 cup skim milk |
1/2 cup golden raisins |
1/4 cup unsweetened applesauce |
1 t finely chopped fresh rosemary |
2 eggs |
2/3 cup sugar |
1 t margarine, melted |
2 cups all-purpose flour |
1 1/2 tsps baking powder |
1/2 tsp salt |
Directions:
1. Coat a 9-inch round cakepan with cooking spray; dust pan with 1 1/2 tsps flour. Set pan aside. 2. Combine milk, raisins, applesauce, and chopped fresh rosemary in a small saucepan, and bring to a simmer over medium heat. (Do not boil.) Remove from heat; cover and set aside. 3. Beat eggs at medium speed of an electric mixer until foamy. Add sugar and margarine, beating well. Combine 2 cups flour, baking powder, and salt; add to egg mixture, beating until smooth. Add milk mixture; beat until smooth. (Batter will be thin.) 4. Pour batter into prepared pan. Bake at 350 for 35 minutes or until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack 10 minutes. Remove from pan, and let cool completely on a wire rack. 16 servings. 5. Per wedge: 129 calories; 1.6 g fat; 26.0 g carb |
