tasty side dish i tried to re-create from one of the lean cuisine spa dishes Ingredients:
10 oz frozen spinach |
8 oz mushrooms, sliced |
3 oz carrot, sliced |
1 clove garlic |
1 cup onion |
2 cup uncle ben whole grain meadly ready rice |
2 tbsp extra virgin olive oil |
2 tbsp rosemary |
Directions:
1. thaw and drain frozen spinach 2. chop mushrooms 3. julienne carrots 4. mince garlic and onion. 5. in a large skillet over medium heat, add all olive oil, garlic,onion, and mushrooms. Once mushrooms begin to cook down, add spinach and stir. 5 mintues later, prepare Uncle ben's whole grain medley ready rice as package instructs and add cooked contents to skillet. stir. add carrots on top. serve. |
