Rosemary Roasted Sweet Potatoes |

From the book The Color Code. You could probably substitue 1 tsp dried rosemary for the Tbs fresh with good results. Ingredients:
2 lbs sweet potatoes, cut into 1 1/2 inch pieces |
3 cloves garlic, chopped |
1 tablespoon fresh rosemary, chopped |
2 tablespoons olive oil |
1/4 cup pine nuts |
2 tablespoons fresh parsley, chopped |
1 teaspoon salt |
1/4 teaspoon fresh ground black pepper |
Directions:
1. Preheat oven to 375ºF. 2. In a roasting pan or large baking dish, combine sweet potatoes, garlic, rosemary and olive oil. 3. Roast for 45 minutes, mixing occasionally. 4. Just before serving, add pine nuts, parsley and salt and pepper. 5. Serve hot. |
