Rosemary Roast New Potatoes |

Yummy roast new potatoes. I use red-skinned potatoes, but I guess you could use white-skinned too. Ingredients:
10 red-skinned new potatoes |
1/2 cup unsalted butter |
1/2 lemon, juice of |
1 teaspoon grated lemon zest |
2 teaspoons rosemary |
salt and pepper |
Directions:
1. Preheat oven to 375F. 2. Quarter potatoes and place in baking dish large enough to create a single layer. 3. Sprinkle on salt and pepper to taste. 4. Melt butter in a pan, with lemon juice and zest. 5. Pour butter mix over potatoes, covering as much as possible and sprinkle with rosemary. 6. Cook until slightly browned (approx 40 mins), turning in the butter mix occasionally. |
