Who would have thought that the combination of peanuts and rosemary would go well together in a cookie? These cookies are delicious. It is suggested to use 3 fresh rosemary stalks and unsalted raw peanuts that are put into either the blender or food processor to chop coarse. Ingredients:
1/2 cup of softened butter |
1/2 cup brown sugar |
1/2 cup white sugar |
1 egg |
3/4 cup of white flour (if you find the batter too moist, then just add a little more flour) |
1/2 tsp. salt |
1/2 tsp. baking powder |
1/2 cup of coarsely chopped peanuts |
3 tbsp. finely chopped fresh rosemary |
Directions:
1. Mix butter, brown and white sugars and egg. 2. In a separate bowl, premix flour, salt and baking powder. 3. Add to wet ingredients. 4. Add peanuts and rosemary. 5. Use a teaspoon and make small “mounds” of dough on a greased baking sheet. 6. Bake at 350F for 9-10 min until golden and brownish at edges. 7. From a Norwegian person named, Magni. |
