A savory mini muffin that is great with smoked turkey and a bit of havarti or in a mini ham sandwich with orange butter and cheddar. Simpler still is orange marmalade and a bit of ham. Ingredients:
1 1/2 cups of all purpose flour |
1 tsp of baking powder |
1 tsp of baking soda |
1/4 tsp of salt |
6 tbsp of sugar |
1 egg well beaten |
1/2 cup of milk |
3 tbsp of melted butter |
2 tsp of finely chopped fresh rosemary |
2 tsp of finely grated orange rind, orange only no pith |
Directions:
1. Preheat oven to 375 degrees. 2. Sift flour, bp, bs and salt into a bowl. 3. Make a well in the center. 4. Add the remaining ingredients including the rosemary and zest. 5. Gently fold. 6. Spoon into 20 buttered mini muffin cups. 7. Bake 12 minutes until firm to the touch. 8. Cool on wire rack. 9. Store in an airtight container. 10. Nice for mini sandwiches and a savory touch with tea. |
