Don't throw out the seeds when carving your jack o' lanterns! They make a delicious salty snack when roasted with herbs & spices. Ingredients:
2 cups fresh pumpkin seeds |
1 tablespoon olive oil |
1 tablespoon dried rosemary |
2 teaspoons garlic salt |
1/2 teaspoon dried thyme |
1/2 teaspoon dried sage |
salt & pepper, to taste |
Directions:
1. Preheat oven to 275ยบ. 2. Toss the pumpkin seeds with olive oil and the spices. 3. Spread the pumpkin seeds in a even layer on a rimmed baking sheet & roast for about 1 hour, stirring every 15 minutes until golden brown. |
