This is a great dish to prepare in advance and let it marinate overnight or more. Then bake it right before you need it. When using small potatoes I usually cut them in half, and when using medium potatoes, I cut them into six or more chunks. The idea is to get lots of surface area for the marinade. Ingredients:
1 lb small red potato |
1/4 cup olive oil |
8 garlic cloves, unpeeled |
3 garlic cloves, minced |
1/2 teaspoon dried rosemary |
1 tablespoon dried onion flakes |
1/2 teaspoon salt |
1/2 teaspoon pepper |
Directions:
1. Preheat oven to 350. 2. Cut potatoes into chunks. 3. Combine all ingredients in a large zip lock bag and toss to coat. 4. Place in a single layer in a baking pan. 5. Bake for 1 hour at 350. |
