Rosemary-Crusted Rack of Lamb |

from The Cast Iron Skillet Cookbook Ingredients:
2/3 cup breadcrumbs |
1 tablespoon chopped fresh rosemary |
1 tablespoon chopped fresh parsley |
1/4 cup salted butter, melted |
2 racks of lamb, trimmed |
salt and pepper |
2 tablespoons dijon mustard, divided |
Directions:
1. Preheat broiler. 2. Mix bread crumbs, rosemary, parsley and butter. Set aside. 3. Season racks with salt and pepper. Place in skillet, meat side up. Interlock bones in center of pan. Cover bones with foil. 4. Broil for 8-10 minutes. 5. Remove pan from oven. 6. Reduce heat to 325ยบ. 7. Brush each rack with mustard. Spread bread crumb mixture over both racks. 8. Roast in oven for 20-25 minutes 9. Remove from oven and let rest 3-5 minutes. |
