These are great as a side or just a snack. Ingredients:
4 large potatoes (russets, yukon gold or red bliss) |
4 t. olive oil, divided |
2 t. fresh rosemary or 3 t. dried rosemary |
salt and pepper to taste |
Directions:
1. Scrub potatoes; do not peel. Steam or microwave potatoes until barely tender. About 8-10 minutes. Remove and cool slightly. 2. When potatoes are cool enough to handle, carefully cut potatoes into 1 rounds. 3. Heat olive oil in a large skillet over medium high heat. 4. Add potatoes in a single layer and cook till golden brown on one side. Turn potatoes over, sprinkle with rosemary salt and pepper. 5. Continue to cook until second side is golden. 6. Taste, correct seasoning and serve hot. |
