Rosemary Chicken and Potatoes |

So simple and even my 2 year old loves it! Most of these measurements are approximate as I just sprinkled stuff over the top and didn't really measure at all. I haven't tried it yet, but I'm sure you could use olive oil in place of the margarine too. Ingredients:
3 boneless chicken breasts |
5 potatoes, peeled and cubed |
1 teaspoon season salt |
1 teaspoon dried rosemary |
1/2 teaspoon garlic powder |
1/4 cup butter or 1/4 cup margarine |
1/4 cup grated parmesan cheese |
salt |
pepper |
Directions:
1. If chicken breasts are large, cut them in half for faster cooking. 2. Place chicken and potatoes in 9x11 pan. 3. Sprinkle season salt, rosemary, garlic powder, salt and pepper on top. 4. Dot top with butter or margarine. 5. Cover with foil. 6. Bake at 375°F for 1 hour. 7. Uncover and sprinkle with parmesan. 8. Broil for 2-3 minutes to melt cheese. |
