Very easy recipe. You can substitute fresh rosemary for dried and use any size chicken breast you prefer, just recalculate the calories. Ingredients:
16 ounce raw chicken breasts, meat only |
1 tsp butter |
1 tsp olive oil |
4 garlic cloves |
1/2 tsp dried rosemary |
1/2 cup fat free chicken broth |
Directions:
1. Season chicken with salt and pepper. In a large nonstick skillet, heat butter and oil over medium heat. Add garlic cloves (more if you love garlic) and cook 2 minutes, without browning. Add chicken and cook, turning, until lightly browned, about 10 minutes. 2. Sprinkle with rosemary; add chicken broth (or add 1/4 c. white wine & 1/4 c. broth). Cover and cook over low heat, turning once, 30 minutes, until tender. 3. Serve chicken and pour remaining pan juices over chicken. |
