Rose Petal Cucumber Yoghurt Salad |

I saw this in the Newpsaper and tried it. Not only was it delcious but absolutely stunning surrounding by the rose petals. If you grow your own roses and don't spray them with pesticides then the petals can garnish various recipes Ingredients:
1 clove garlic |
1 tsp salt |
2 tbs chopped mint |
1 cup greek yoghurt |
4 cups peeled, seeded and sliced cucumbers |
fresh unsprayed red rose petals |
Directions:
1. Mash garlic and mix in with salt and chopped mint using a wooden spoon in bottom of a bowl 2. Stir in the yoghurt and mix well 3. Peel cucumber and cut in half lengthwisese remove seeds and slice in rounds 4. Fold them into the yoghurt mixture 5. Chill and best after 2 hours of chilling 6. Use the rose petals to garnish and surround the sides of the salad in the bowl with them. 7. Sprinkle some smaller chopped petals over the salad |
