5-Ingredient Fix Contest Entry. A quick side dish with flavour & plenty of nutrients Good for St Pat's Day too:) You can also add basil or rosemary to this, and/or other root veggies, e.g. sweet potatoes, parsnips & kohlrabi, and even bacon bits! Ingredients:
2 (24 ounce) packages simply potatoes traditional mashed potatoes |
1 lb celery root, peeled, cut into 3/4 inch cubes |
1 piece horseradish, 6-inch, peeled, coarsely grated |
1 1/2 cups sour cream |
1 (12 ounce) package chopped spinach, frozen okay, drained |
Directions:
1. Place celery root & horseradish in a pot. Add water to cover by 1”. Bring to a boil, reduce heat to medium-high, and simmer until vegetables are tender, 20–25 minutes. 2. Drain, reserving 1/2 cup cooking liquid. Return vegetables to pot; add sour cream. Use a potato masher, coarsely mash vegetables. 3. Add Simply Potatoes® Traditional Mashed Potatoes & reserved cooking liquid by tablespoonfuls if mash is too stiff. 4. Add chopped spinach and mix/stir 1 minute. 5. (Re)warm potatoes in the overn, adding more cooking liquid to moisten as needed. 6. Mound the mash in a bowl and serve. |
