Root Beer flavored cookies with a perfect icing, They are soft and sweet and they melt in your mouth.
Ingredients:
1 cup packed dark brown sugar
4 oz canola oli margarine
1/2 stick unsalted butter, at room temperature
1 large egg
1 teaspoon vanilla
1/2 teaspoon baking soda
1/2 teaspoon salt
1 3/4 cups flour
2 teasoons root beer concentrate
for icing
2 cups confectioners' sugar
1/3 cup unsalted butter, at room temperature
3 tablespoons water
1 teaspoon root beer concentrate
Directions:
1. For Cookies:
2. In a large bowl, using a stand mixer or an electric hand mixer on medium speed, beat the brown sugar, margarine, butter and egg for several minutes unitl well blended and fluffy.
3. Blend in vanilla, baking soda, salt, and flour in small increments, and the root beer cocentrate. The batter will be stiff.
4. Cover and refridgerate for 1 hour.
5. Preheat oven to 375 degrees.
6. Line baking sheet with parchment paper.
7. Drop the dough by the teaspoonfuls, spaced about 2 inches apart on sheets.
8. Bake for 6 6 minutes.
9. Transfer to wire rack to cool.
10. For Icing:
11. Combine sugar with butter and mix well.
12. In cup combine the water with the root beer concentrate, then add to the sugar mixture and mix well. Spread on cooled cookies and wait 30 min. to serve.
