My dad is The Best Cook ! He recently had a stroke that has left him unable to speak or write many words. I am so glad I was able to get this recipe and several others from him before they were locked up inside. His cooking along with his family are his legacy, that I wanted to share. Ingredients:
1 (28 ounce) can crushed italian tomatoes |
1 (8 ounce) can tomato sauce |
1 (6 ounce) can tomato paste |
2 garlic cloves, chopped |
1 medium onion, chopped |
olive oil |
4 links italian sausage |
2 tablespoons parmesan cheese |
1 teaspoon red pepper flakes |
2 tablespoons oregano |
1 tablespoon salt |
fresh ground pepper |
Directions:
1. Set stove to meduim high heat. Coat bottom of pan with olive oil. Saute onions until translucent while browning sausage lightly. Add garlic, then the rest of the ingredients. Turn stove down to low and simmer uncovered until ragu is reduced by 1/3 (about 2 1/2 to 3 hours) Taste and adjust seasoning as needed. |
