From The Old World Kitchen by Elisabeth Luard. My dad made this for us and I loved it and so had to have the recipe of course! Ingredients:
8 oz sliced bacon |
2 onions, sliced |
2 green bell peppers, hulled and chopped |
1 cabbage, cut into slices |
salt & pepper |
several sprigs of dill and savory, chopped |
1 1/2 qt water |
2 egg yolks |
1/2 cup heavy cream (sweet or sour) |
1 t vinegar |
Directions:
1. Use a large soup pot. 2. Chop up and fry one slice of bacon until the fat runs. 3. Fry the onions in the fat until golden. 4. Add peppers and fry also. 5. Remove from heat. 6. Layer the cabbage and the rest of the bacon into the soup pot. 7. Season the layers with salt, pepper, and the herbs. 8. Pour the water over it all and bring to a boil. 9. Turn heat down and simmer for 40 - 50 minutes until veggies are tender. 10. Remove soup from the heat. 11. Beat the egg yolks with the cream and vinegar in a bowl. 12. Stir in a ladleful of the hot soup. 13. Whish well pour the mix into the soup to thicken and enrich. 14. Serve in deep bowls accompanied with fresh bread. 15. A meal in itself! |
