Romaine With Pickled Vegetable Salad |

This salad is made with jarred giardiniera salad and canned beans. From Real Simple magazine. You will have leftover dressing for another use. Ingredients:
6 cups romaine lettuce, torn |
1 (15 ounce) can cannellini beans, rinsed and drained |
1/4 cup giardiniera, rinsed and drained |
1/4 red onion, thinly sliced |
1/3 cup olive oil |
3 tablespoons fresh lemon juice |
1 garlic clove, crushed |
1/2 teaspoon kosher salt |
1/4 teaspoon fresh ground black pepper |
Directions:
1. Toss lettuce with beans, giardiniera, and red onion. 2. Whisk together dressing ingredients OR place them in a lidded glass jar and give a good shake. 3. Drizzle 4 tablespoons of the dressing over the salad and toss well. |
