Different twist on a salad that is delicious. Ingredients:
3tbs mayonnaise |
11/2tbs chopped fresh mint |
2tsp fresh lemon juice |
1/2c chopped marinated artichoke hearts |
1/2c chopped hearts of palm |
1/2 avocado,chopped |
salt |
1/2 pomegranite |
4 leaves romaine lettuce from the heart |
Directions:
1. In a med. bowl,stir together mayo,mint and lemon juice.Add the artichoke hearts,hearts of palm and avocado and toss to combine. Season with salt. 2. In a bowl of water,peel pomegranite to release the seeds;drain. Spoon the tossed salad onto the lettuce halves and sprinkle the pomegranite on top. |
