Prep: 3 minutes. Look for bags of hearts of romaine in the produce section. To shred, cut lettuce crosswise into 1/2-inch slices. Ingredients:
1 tablespoon fresh lemon juice (about 1/2 lemon) |
2 teaspoons extravirgin olive oil |
1/4 teaspoon salt |
1/4 teaspoon pepper |
3 cups shredded romaine lettuce |
1/2 cup sliced mushrooms |
Directions:
1. Combine first 4 ingredients in a medium bowl. Add lettuce and mushrooms. Toss well. |
