From Tastes for All Seasons by Crye-Leike. Ingredients:
1 bunch romaine lettuce, ripped into bite size pieces |
1 cup celery, chopped |
2 green onions with tops, chopped |
1 (11 ounce) can mandarin oranges, drained |
1/4 cup almonds |
2 tablespoons sugar |
1/4 cup salad oil |
2 tablespoons apple cider vinegar |
2 tablespoons sugar |
1/2-1 teaspoon salt |
3 dashes tabasco sauce |
fresh ground black pepper, to taste |
Directions:
1. To Caramelize Almonds: Put almonds in a small skillet or saucepan. Sprinkle with sugar. Heat, stirring constantly, until light brown. Put almonds on waxed paper to cool. 2. For Dressing: Whisk all ingredients together until well mixed. 3. For Salad: Mix all salad ingredients, caramelized almonds and dressing. |
