This is a very good cake. The key is to pour the topping over a warm cake then allow to sit several minutes before serving. The wonderful blend of flavors Ingredients:
1 cup oats |
1-1/4 cup boiling water |
1/2 cup shortening |
1 cup granulated sugar |
1 cup light brown sugar |
2 eggs |
1 teaspoon vanilla |
1-1/2 cups flour |
1 teaspoon soda |
1/2 teaspoon baking powder |
1 teaspoon cinnamon |
1/2 teaspon nutmeg |

5 tablespoons oleo |
1/2 cup light brown sugar |
1/2 cup milk |
1/2 cup coconut |
1/2 cup chopped pecans |
Directions:
1. Mix oats and boiling water then allow to stand 20 minutes. 2. Cream together shortening, sugars, eggs and vanilla. 3. Combine cooled oat mixture, flour, soda, baking powder, cinnamon and nutmeg together. 4. Combine with shortening mixture. 5. Pour into greased rectangular cake pan. 6. Bake at 350 for 35 minutes. 7. Boil oleo, brown sugar and milk for 7 minutes. 8. Stir in coconut and pecans and pour over warm cake. |
