Another recipe from Crosby Molasses, I haven't tried this one yet, but it sounded like it would be a good one so I decided to pass it on, I hope you enjoy it, and let me know if you do!! Ingredients:
1/2 cup molasses |
1/4 cup shortening |
1/4 cup sugar |
1/2 teaspoon salt |
1/2 cup sifted pastry flour |
1 teaspoon nutmeg |
1 teaspoon cinnamon |
1 egg, well beaten |
3 cups confectioners' sugar |
1 egg white, unbeaten |
1 teaspoon vanilla extract, lemon extract or 1 teaspoon rum extract |
1/3 cup butter |
1 tablespoon molasses |
2 tablespoons milk |
Directions:
1. Heat molasses to boiling point. Add shortening sugar and salt. Sift together flour and spices, add alternately with beaten egg. Drop by teaspoonful on a well greased cookie sheet. Bake at 300F for about 10 minutes. Cool 2 minutes and curl around a wooden spoon handle that has been greased. Cookies may be filled with Molasses Butter Frosting. (If cookies become too crisp to roll, heat a few minutes in oven.) For best results on this recipe, use Fancy Molasses, Lite molasses is not recommended. 2. MOLASSES BUTTER FROSTING:. 3. Add 1 cup confectioners sugar, egg white and flavoring to creamed butter. Mix well. Add remaining confectioners sugar alternately with molasses and milk. Beat well. |
