This is a very good, slighty crunchy cookie. I liked to make small gingerbread man shapes when my kids were small. Prep time includes chilling time. Ingredients:
1/2 cup shortening |
1 cup molasses |
2 1/2 cups all-purpose flour |
1 1/2 teaspoons baking soda |
1 teaspoon salt |
2 teaspoons grated fresh lemon rind |
1 teaspoon ground cinnamon |
Directions:
1. Put shortening and molasses in small saucepan and bring to a boil. 2. Remove from heat and cool. 3. Combine remaining ingredients and stir in the cooled molasses mixture. 4. Mix well; cover container and chill in refrigerator for 3 hours. 5. Roll dough on lightly floured board to about 1/4 inch thickness. 6. Cut in desired shapes and place cookies about 2 inches apart on ungreased shiny cookie sheets. 7. Work quickly because dough softens as it warms. 8. Bake at 350 degrees about 8 to 10 minutes. |
