Stuffed and rolled flank steak simmered in tomato sauce. Serve over angel hair pasta Ingredients:
1 flank steak |
1 bunch parsley |
6 garlic cloves |
3 hard-boiled eggs |
2 raw carrots |
1 lb sharp cheddar cheese |
1 (20 ounce) can crushed tomatoes |
1 (6 ounce) can tomato paste |
1 large onion |
2 garlic cloves |
2 pinches oregano |
1 pinch thyme |
1 pinch sweet basil |
1/4 lb ground pork |
3 tablespoons olive oil |
1 tablespoon sugar |
Directions:
1. Split the steaks. 2. After peeling cut carrots in half then split lengthwise in 2 or 4 pieces. 3. Cut the hard boiled eggs lengthwise in quarters. 4. Cut cheese into sticks. 5. Smear steaks with minced and parsley, salt and pepper to taste. 6. Alternate with carrots, eggs, cheese across the meat. 7. Roll meat like a jelly roll fasten with string. 8. Brown on all sides and let simmer slowly in the sauce. 9. For the sauce. 10. Heat oil in a large sauce pan, add onions cook until golden brown. 11. Add garlic and ground pork, let cook until onions are a little darker. 12. Add tomato paste and cook for 5 minutes. 13. Add can of crushed tomatoes and spices along with the sugar. 14. Salt and pepper to taste. |
