I like this recipe when I need a larger batch of sugar cookies, and one that can be rolled and cut out or simply rolled into balls and flattened before baking…simple, soft on the inside, crispy around the edges, versatile recipe. Read more . I’ve changed the extract to lemon or orange, and added a tablespoon of grated lemon or orange peel for a nice citrus addition, adding some lemon or orange juice and grated peel to the frosting as well. Spice it up any way you can imagine – good basic recipe that lends itself well to creative additions. Ingredients:
1 cup butter, softened |
2 cups sugar |
2 eggs |
1 cup sour cream |
2 teaspoons vanilla extract |
1/2 teaspoon salt |
1 tablespoon baking powder |
11/4 teaspoons baking soda |
5 cups flour |
Directions:
1. With a mixer on medium speed, cream butter and sugar together well. 2. Add eggs, sour cream, and extract, beating until well blended. 3. Add dry ingredients and mix together well with a wooden spoon; cover and chill dough for at least an hour. 4. Using about 1/4 of the dough, roll dough out to 1/4 thickness on a powdered sugar covered counter or board, using minimum amount of powdered sugar to prevent dough from sticking to counter or board. Using powdered sugar instead of flour will keep these cookies crisp and light. 5. Cut out into shapes with cookie cutters and place on lightly greased baking sheet about 2” apart. 6. If you prefer not to roll out the dough, you can roll pieces of dough into approximately 2” balls, place on lightly greased cookie sheet about 2” apart, and press down with the bottom of a lightly greased glass or your fingertips to flatten the balls to 1/4” thickness. 7. Bake at 360 degrees until bottom is light brown, about 8 minutes. 8. Remove from cookie sheet and cool completely before frosting with powdered sugar frosting. 9. For turtle cookies, spread cookies with melted caramel (40 caramels melted with 2 tablespoons cream), then chocolate frosting, then top with pecan half or 4 pecan feet as shown in the picture. |
