Rocky Road Pudding (Popsicles Info Included) |

I always thought Rocky Road involved peanut butter (which I don't like), but this recipe proves me wrong. Finally, something I can enjoy too! Note: cook time also includes chill time Ingredients:
1/3 cup sugar |
1/3 cup cocoa |
1/8 teaspoon salt |
1 cup milk |
1 cup evaporated milk |
1/4 cup honey |
1 egg |
1 teaspoon vanilla |
1/4 teaspoon almond extract |
2/3 cup mini marshmallows, divided |
24 maraschino cherries (for garnish) |
Directions:
1. In med saucepan, combine sugar, cocoa and salt. 2. Whisk in milks and honey until smooth. 3. Cook over med heat, whisking constantly until mixture boils. 4. Cook, whisking constantly, for 1 minute. 5. Remove from heat. 6. In a small bowl, whisk eg until foamy. 7. Gradually whisk 1/4 cup of the pudding mixture into the egg. 8. Return egg mixture to saucepan, whisking constantly until blended. 9. Cook pudding over low-med heat, whisking constantly until slightly thickened, about 2 minutes. 10. Do NOT boil. 11. Remove from heat. 12. Stir in vanilla and almond extract. 13. Cool slightly. 14. Add 1/3 cup mini marshmallows, stirring until almost melted. 15. Pour pudding into a bowl. 16. Press plastic wrap directly on to surface of pudding, cool to room temperature. 17. Chill for 1 hour. 18. Divide pudding among cups and top with remaining marshmallows and cherries. 19. To Make Popsicles: spoon prepared pudding mix into plastic cups. Freeze until semi-firm, about 1 hour. Insert popsicle sticks into each cup and freeze until solid. |
