Chocolate sponge, white chocolate chips and marshmallow pieces in a muffin shape Ingredients:
3 oz butter |
225 g plain flour |
55 g cocoa powder |
1 tbsp baking powder |
1/8 tsp salt |
115 g caster sugar |
100 g white chocolate chips |
50 g mini marshmallows |
2 eggs |
250 ml milk |
Directions:
1. Preheat the oven to 200C/400F/Gas mark 6 and grease a 12-hole muffin tin. 2. Sift together the flour, cocoa powder, baking powder and salt into a large bowl. Stir in the sugar, chocolate chips and marshmallows. 3. Place the eggs in a bowl and beat lightly, then beat in the oil and milk. 4. Make a well in the middle of the dry ingredients and pour in the beaten liquid. 5. Stir in the liquid gently until just combined (don't overmix or the muffins will be tough) 6. Spoon the final mixture directly into the muffin tin, or into liners, if using. 7. Bake in a preheated oven for 20 minutes, or until just risen and firm to the touch. 8. Leave to cool in the tin for ~5 minutes, then either serve warm or leave to cool completely on a wire rack. |
