Ooey, gooey and good accurately describe these family-favorite brownies! Nuts and chocolate chips add extra richness and a little crunch. Ingredients:
1 cup butter, cut up |
8 ounces unsweetened chocolate, chopped |
5 eggs |
3 cups sugar |
2 teaspoons instant espresso powder |
1 tablespoon vanilla extract |
1-2/3 cups king arthur unbleached all-purpose flour |
1/2 teaspoon salt |
1 cup chopped walnuts |
1/2 cup semisweet chocolate chips |
topping: |
2 cups miniature marshmallows |
1 cup chopped walnuts |
1 cup (6 ounces) semisweet chocolate chips |
Directions:
1. In a microwave, melt butter and chocolate; stir until smooth. Cool slightly. In a large bowl, beat the eggs, sugar and espresso powder until thickened, about 5 minutes. Stir in vanilla and chocolate mixture. Combine flour and salt; gradually add to chocolate mixture. Fold in walnuts and chocolate chips. 2. Transfer to a greased 13-in. x 9-in. baking pan . Bake at 350° for 25-30 minutes or until a toothpick inserted near the center comes out with moist crumbs (do not overbake). 3. For topping, in a large bowl, combine the marshmallows, walnuts and chocolate chips. Sprinkle over top. Bake 4-6 minutes longer or until marshmallows are lightly browned. Cool on a wire rack. Cut into bars. Yield: 3 dozen. |
