Ingredients:
1 (19 1/2 ounce) package brownie mix |
1/2 cup vegetable oil |
1/4 cup water |
3 large eggs |
2 cups semisweet chocolate chips, divided |
2 cups miniature marshmallows |
1 cup coarsely chopped roasted lightly salted peanuts |
Directions:
1. Preheat oven to 350°; position oven rack in the lower third of the oven. 2. Spray the bottom only of a 13 x 9 inch baking pan with nonstick cooking spray. 3. In a bowl, mix the brownie mix, oil, water, and eggs with a wooden spoon until just blended and all dry ingredients are moistened. 4. Stir in 1 cup chocolate chips; spread batter into prepared pan. 5. Bake 28-30 minutes or until toothpick inserted 2 inches from side of pan comes out clean or almost clean (do not overbake). 6. Remove pan from oven and immediately sprinkle with marshmallows, remaining 1 cup chocolate chips, and the peanuts. 7. Cover pan with cookie sheet for about 5 minutes to soften (slightly) the chocolate chips and marshmallows. 8. Remove cookie sheet; transfer to a wire rack and cool completely. |
