We have enjoyed these on our youth camping trips. They are easy to make ahead and reheat in the campfire, or if you have a cook stove they are easy to throw together in a pot and roll up fresh. **The amounts are guesstimates right now, I'll try to update with more accurate measurements after I make them this weekend!** Ingredients:
1 (10 ounce) can black beans (drained) |
1 (7 ounce) can diced green chilies |
1 bunch green onion, chopped |
1 bunch cilantro, chopped |
1 (1 1/4 ounce) package taco seasoning |
1 (10 ounce) can refried beans |
1 cup sour cream |
1 avocado (diced or sliced) |
3 tomatoes (diced or sliced) |
1 head lettuce, shredded |
1 (10 ounce) can black olives, sliced |
2 cups shredded cheese |
2 cups salsa |
10 -12 flour tortillas |
Directions:
1. Combine black beans, green chiles, taco seasoning, green onion and cilantro. Spoon mix into each burrito, then top with whichever extras you desire. |
