We have enjoyed these on our youth camping trips. They are easy to make ahead and reheat in the campfire, or if you have a cook stove they are easy to throw together in a pot and roll up fresh. **The amounts are guesstimates right now, I'll try to update with more accurate measurements after I make them this weekend!**
Ingredients:
1 (10 ounce) can black beans (drained)
1 (7 ounce) can diced green chilies
1 bunch green onion, chopped
1 bunch cilantro, chopped
1 (1 1/4 ounce) package taco seasoning
1 (10 ounce) can refried beans
1 cup sour cream
1 avocado (diced or sliced)
3 tomatoes (diced or sliced)
1 head lettuce, shredded
1 (10 ounce) can black olives, sliced
2 cups shredded cheese
2 cups salsa
10 -12 flour tortillas
Directions:
1. Combine black beans, green chiles, taco seasoning, green onion and cilantro. Spoon mix into each burrito, then top with whichever extras you desire.
