Very healthy, hearty, and delicious. Can't get enough of sweet potatoes and chickpeas! Ingredients:
2 tsp olive oil |
1 c. chopped onions |
1/2 c each: diced celery and chopped green pepper |
1 cup chopped mushrooms |
3 cloves minced garlic |
3 c chicken or vegetable broth |
3 cups peeled, cubed sweet potatoes |
1 can (19 oz) diced tomatoes |
1 can (19 oz) chickpeas, drained and rinsed |
1 tbsp lemon juice |
2 tsp grated gingeroot |
1 tsp each: cumin, curry, coriander & chili powder |
1/2 tsp salt |
1/4 tsp pepper |
1/4 c raisins (optional) |
2 tbsp each: peanut butter and cilantro (optional) |
Directions:
1. Heat olive oil in a large, saucepan over medium high heat. Add onions, celery, gr pepper, mushrooms and garlic. 2. Cook and stir until veggies begin to soften about 3 minutes. 3. Add remaining ingredients, except raisins, p. butter and cilantro. 4. Bring to a boil. Reduce heat to low and simmer, covered for 20 minutes or until sweet potato is tender. 5. Stir in raisins, p. butter and cilantro. Mix well. Simmer for 5 more minutes. 6. ENJOY! |
