Rockin Baked Apples With Dates And Pecans |

A tasty dessert using delicious fall apples! Ingredients:
1/4 cup chopped, toasted pecans |
1/4 cup chopped, pitted dates |
zest and juice of one orange |
1 teaspoon cinnamon, divided |
1/4 teaspoon salt |
4 baking apples, such as mcintosh or your choice |
1 tablespoon of melted butter |
2 cups of apple juice - unfiltered is good |
2 tablespoons brown sugar |
2 teaspoons cornstarch |
1 tablespoon water |
Directions:
1. Heat oven to 350 degrees; 2. In a bowl, stir together pecans, dates, orange zest and juice, 1/2 teaspoon of cinnamon, and salt; 3. Core the apples, leaving 1/2 inch at the bottom, and peel just the top edges of each; 4. Stuff the apples with the pecan/date mixture; 5. Brush the tops with melted butter; 6. Arrange apples in baking dish, and add apple juice to the bottom of the dish; 7. Cover tightly with foil; 8. Bake until apples are tender but not mushy - 35 to 45 minutes; 9. Transfer baked apples to serving platter; 10. Pour juices from the baking dish into a small saucepan; 11. Simmer over medium heat for 5 minutes until reduced by half; 12. Add brown sugar and remaining cinnamon, stirring until dissolved; 13. In seperate small bowl, mix cornstarch and water; add to mixture in saucepan and heat until thickened; 14. Serve apples immediately with sauce. 15. Note: I plan to try this using a bit of bourbon for part of the liquid......mmmmm...... |
