These are a bit of an Aussie classic. After 7 weeks on holiday in America, jeremy was missing the cuisine of the homeland a bit. When we got home he requested these and i had them baked fresh as for him as soon as he got to my place. Read more . :) i'm so nice. Makes about 9 big ones. These are fun for little ones to make too! Ingredients:
1 3/4 cup self raising flour |
1/4 cup wholemeal self raising flour |
1 tsp grated citrus peel (any, i used mandarin 'cause its all i had on hand) |
1 tsp allspice |
70g butter |
1/4 cup raw sugar |
1/3 cup sultanas |
1/2 cup milk |
1 tsp vanilla essence |
1 egg (beaten) |
Directions:
1. In a biggish bowl combine flour, peel and allspce. Rub in the butter. 2. Mix in the sugar and sultanas, then add milk, vanilla and egg. 3. Preheat oven to 190°C. Place 2 rough balls of mixture (about 2 Tbsp each) on a lined baking tray. 4. Sprinkle with extra raw sugar and bake for 5. 15-18 minutes, till golden. |
