Robyns Famous Potato Salad |

My niece makes this great salad for a special occassion. It's very tasty and doesn't use mayonnaise. Ingredients:
750g potatoes, cooked and cut into chunks |
1 can beef bouillon |
250g ham, cubed |
1 red onion, cut in rings |
150g tiny pickles (gerkins or dills), sliced lengthwise |
100g cocktail onions, whole |
1 small jar of capers, drained |
2 tbsp of vinegar |
2 tbsp olive oil |
salt and pepper to taste |
Directions:
1. Cook the potatoes and cool.Cut into large chunks. 2. Cube the ham. You can use slices and cut in strips. 3. Mix together and add the pickles, capers, onions. 4. Mix together the oil and vinegar. Add the salt and pepper. 5. Gently stir into the salad. 6. Add can of bouillon a little at a time. How much you add will depend on how dry your potatoes are and how creamy you like the salad. 7. Refrigerate at least 2 hours so the flavours can blend. |
