Robins Favorite Easy Stovetop Spinach Dip |

I make this every time my friend Robin comes over! She just love it, and there is really nothing to it...I threw it together one time when she and hubby were coming over, using what I had, and she loves it so much I make it every time! Read more ! LOL Not sure I make it the same way every time, play with it, use what you have/like, and it will be good!! Ingredients:
10 frozen chopped spinach |
drizzle evoo |
1 pad margarine |
1/2 small white onion, chopped |
1/4 red pepper, chopped small (optional) |
3 t chopped garlic |
1 t worcestershire |
1 dash red pepper flakes |
seasoned salt |
garlic pepper |
juice of a lemon wedge |
2 t dry ranch |
8 oz cream cheese (softened) |
4 - 6 t sour cream |
2 = 4 t dukes real mayo |
1/4 - 1/2 c parmesan |
1/2 c mozzerella, shredded (any white cheese works, i've sued swiss, italian blend, asiago, last time i used havarti, pepper jack would be good, too) |
1/2 c colby/moneterrey jack, shredded (i have used fiesta blend, too. sometimes i leave this one out, depends on what i have on hand - but i alawys add in the white cheese). |
1/4 c chopped red tomatoes (optional) |
Directions:
1. In large, nonstick skillet, drizzle EVOO and add pad of margarine or butter 2. When melted together, add spinach 3. As spinach begins to cook and is no longer frozen, add all ingredients from onion through the dry ranch. 4. Stir and cook togher until onion/red pepper is soft 5. Turn heat off and stir in cheeses, when melted, remove from heat and stir in sour cream and mayo 6. Turn into glass serving dish, and top with chopped tomatoes 7. Serve with tortilla chips, pita chips, triscuit, etc. Also good cold, but, better warm 8. *** ADDITIONAL USES: This makes a pretty large amount to use only for dip...especially if your party is small! LOL I have taken the leftovers and used to stuff chicken breasts, burgers, or, spread on tortillas to make appetizer pinwheels, or, baked in crescent rolls for appetizers*** |
