Yummy, veggie dish that is very filling. Submitted by Jody C. Ingredients:
1 eggplant, roasted and sliced |
1 (28 ounce) can spicy pasta sauce |
1 cup shredded mozzarella cheese |
1/4 cup grated parmesan cheese |
1/4 cup chopped fresh basil leaf |
Directions:
1. Preheat oven to 400°F Coat a lare baking sheet with Pam. 2. Arrange eggplant slices on prepared baking sheet. 3. Top each slice with an equal amount of sauce and then top with mozzarella and Parmesan. 4. Bake 8 - 10 minutes, until cheese is bubbly. 5. Top with basil before serving. |
