Roberta's Cauliflower Salad

Ingredients:
1 small cauliflower, thinly sliced
3/4 cup(s) chopped watercress (or parsley)
1 clove(s) garlic
pepper to taste
3 unpeeled red apples, diced
1/4 cup(s) red wine vinegar
1/4 cup(s) salad or olive oil
1/2 teaspoon(s) salt
1 cup(s) sliced celery
3 small green onions, sliced
Directions:
1. Chill cauliflower, apples, celery, onions, parsley or watercress thoroughly so they are very crisp. Rub salad bowl with clove of garlic and salt. Shake vinegar, oil and pepper together. Pour dressing over salad and toss lightly. Taste for seasonings. (I substituted arugula for the parsley/watercress).
