Roast beef dinner in a martini glass! Who'd have thought? Be strikingly original and serve these hearty 'cocktails' as appetizers at your next party. Ingredients:
1 (24 ounce) package bob evansĀ® original mashed potatoes |
2 tablespoons prepared horseradish |
8 (1 ounce) slices medium rare roast beef |
1/2 cup au jus |
4 ounces crumbled goat cheese |
4 teaspoons crispy fried shallots |
1 tablespoon snipped chives |
Directions:
1. Prepare Bob Evans Original Mashed Potatoes by following the recommended microwaving instructions on the package. 2. Mix in 2 Tbsp of prepared horseradish until well combined. 3. Place 6 oz. of Bob Evans Original Mashed Potatoes with horseradish in a martini glass. 4. Top with 2 slices of medium rare roast beef, mounded in the center. 5. Top with 1 oz of au jus. 6. Place 2 Tbsp goat cheese over beef and au jus. 7. Top with 1 tsp. crispy shallots 8. Garnish with fresh snipped chives |
