Roasted Zucchini With Garlic |

This is my own recipe, and I only use fresh zucchini. It's very healthy and delicious. Enjoy! The baking time is approximate. Ingredients:
5 medium zucchini |
1 whole bulb of garlic |
2 tablespoons extra virgin olive oil |
1 tablespoon balsamic vinegar |
1 teaspoon kosher salt |
fresh ground black pepper (to taste) |
Directions:
1. Wash and trim ends of zucchini. 2. Slice zucchini lengthwise and then into 1-inch pieces. 3. Slightly crush and peel all the cloves of garlic. 4. Mix zucchini, garlic and remaining ingredients in a large bowl. 5. Lay evenly onto a foil lined pan. 6. Bake uncovered at 425°F for about 60 minutes or until tender and browned, turning once after first 30 minutes. |
