Roasted Yams

Ingredients:
4 medium yams, cut into wedges (about 3.25 lbs)
4 tablespoons seasoned basting oil, divided
1 small red onion, peeled, halved, thinly sliced
1/4 cup balsamic vinegar
2 tablespoons grated parmigiano-reggiano cheese
Directions:
1. Preheat oven to 350 degrees.
2. Arrange yams in a single layer on a large baking sheet.
3. Toss with 3 tbsp basting oil.
4. Roast on center rack 45 min or until tender.
5. Heat remaining oil in a skillet on medium heat.
6. Add onion; cook with stirring for 10 min until slightly browned and soft.
7. Add vinegar.
8. Cook 2-3 min to reduce to a syrupy consistency.
9. Remove yams from oven.
10. Cover with onions and cheese.
11. Roast for 10 more minutes.
