South Beach Recipe Ingredients:
1 lb asparagus |
1 medium zucchini |
1 medium squash |
1 medium green pepper |
1 medium red pepper |
1 medium red onion |
3 tbsp extra virgin olive oil |
1 tsp salt |
1/4 tsp black pepper |
Directions:
1. Heat oven to 450 degrees. 2. Cut veggies into bite-sized pieces. 3. Toss together with oil, salt & pepper. 4. Lay in single layer on cookie sheet. 5. Bake 30 minutes, turning occassionally until golden brown and tender. |
