A mainstay of my wife's diet Ingredients:
4 onions |
1 red pepper |
1 green pepper |
1 yellow pepper |
3 tomatoes |
10 ounces frozen green beans |
3 garlic cloves |
1/2 cup fresh cilantro, chopped |
2 tablespoons olive oil |
1 tablespoon chicken soup powder or 1 tablespoon onion soup mix |
1 teaspoon coarse salt |
1 teaspoon black pepper |
Directions:
1. Cut all veggies into strips. 2. Mix all ingredients in a bowl. Pour into a baking pan, and cook on high (200C) for 1/2 hour. 3. Lower temperature to 160C and leave at least an hour and a half. |
