Ingredients:
1 cup(s) couscous (dry)
1 zuchinni bite size pieces
1 acorn squash
1 yellow onion
1 head of broccoli
1 roma tomato
1-2 pinch(s) pecorino romano cheese
Directions:
1. cut all the vegetable into bitesize pieces and put in a baking dish. drizzle with olive and/or sesame oil and pepper and seasalt and a dash of thyme and roast on 350 for 25-30 min.
2. cook couscous to package instructions and when couscous is done mix in with finished vegetables and romano cheese. add more salt and pepper if needed.
