Roasted Tomatoes With Garlic And Herbs |

Gorgeous home made roasted tomatoes. Delicious warm our cold. They are fantastic stirred though just cooked spaghetti. Ingredients:
9 large egg tomatoes (810g) |
1 teaspoon sea salt |
1 teaspoon cracked black pepper |
8 sprigs fresh thyme |
2 cloves garlic, sliced thinly |
1/4 (60ml)cup olive oil |
2 teaspoons finely chopped fresh oregano |
1 teaspoo finely chopped fresh thyme |
Directions:
1. Preheat oven to moderately hot. 2. Halve tomatoes; place cut side up in a single layer in a large baking dish. sprinkle tomato with combined salt, pepper, thyme sprigs, garlic and 1 tablespoon of the oil. Roast, uncovered, in a moderately hot oven about 1 hour or until tomato softens and browns lightly. 3. Drizzle tomato with combined herbs and remaining oil. |
