Ingredients:
few sprig(s) fresh thyme |
2 clove(s) garlic, minced |
3 tablespoon(s) olive oil |
salt, to taste |
6 to 8 tomatoes |
Directions:
1. Heat an oven to 250 degrees and line a baking sheet with parchment paper. 2. Slice an 'x' just through the skin on the bottom of each tomato. Put them in boiling water for a few seconds, then immediately chill them in ice water. Drain the water. Starting at the flaps created by the cuts, peel off the skins. Core the tomatoes, quarter them, and then cut or scrape off the seeds. 3. Discard the seeds and place the slivers of tomato flesh on the baking sheet. Drizzle with olive oil, garlic, thyme and salt. Bake them in the oven about 1 1/2 hours, at which point they will be tender and full of concentrated tomato flavor. |
