From Master Class at Johnson & Wales episode 326, Tomato Toppings. Ingredients:
3 lbs plum tomatoes, cut in half |
2 tablespoons extra virgin olive oil |
8 garlic cloves, cut in large chunks |
2 teaspoons dried basil |
1 pinch coarse salt |
1 pinch ground black pepper |
1/2 teaspoon white sugar |
Directions:
1. Toss all ingredients together. Pour onto a roasting pan. Arrange tomatoes cut side down. Roast in preheated 375°F oven for 20-30 minutes. 2. Remove skins and place tomatoes in a bowl. Drain oil from pan into bowl, and add additional olive oil to cover. Store, tightly covered, in refrigerator up to 4 weeks. |
