Roasted Tomato Slices With Olives And Blue Cheese |

Love these with a grilled stead! Time perparation to serve as soon as they are removed from the oven. Top with blue cheese, feta cheese, paremsan or mozzerella. Ingredients:
3-4 t olive oil |
3 large just ripe tomatoes |
kosher salt |
fresh ground black pepper |
1/2 c pitted kalamata olives, slivered |
1/3 c chopped green onions, including 2 inches of stems |
2 t red wine vinegar |
1 t chopped fresh flat leaf parsley |
1 t chopped fresh basil |
1 t minced garlic |
1/2 c crumbled blue or feta cheese, or shredded parmesan or mozzerella |
Directions:
1. Preheat oven to 350 with rack in center 2. Lightly coate bottom of 9x13 inch pan with all but 1 T pf the oil 3. Slice tomatoes into 1/2 inch thick rounds 4. Arrange slightly overlapping in prepared pan 5. Salt and pepper generously 6. In a small bowl, combine olives, onions, parsley, basil, vinegar, garlic and 1 T oilive oil. 7. Mix well and sprinkle over the tomatoes 8. Top with cheese 9. Bake until tomatoes are hot, about 10 minutes 10. Remove and serve while warm. Do not overcook, or tomatoes will become mushy |
